These are exciting times at Marta Ines Quintana's Towson cafe. The chef is building on a foundation menu of Cuban fare with more personal touches -- fresh yucca with her own mojo sauce; maccarones con bechamel, Cuban-style macaroni and cheese; and arroz con huevo frito, a traditional Cuban snack of fried egg over rice. --Richard Gorelick
